Mornings are my great moment of the day, when I have a bit of time for me while the world still sleeps. Opposite to the majority of people, I love the sound of my alarm clock at 5:30 or 6 in the morning, notifying me the day begins. And after my great big juice of fruits or vegetables, I go onto the terrace and fill myself full with the energy and marvelous power of the mountains.
Truth is, this week I have two messages in mind, but no time to say them. I was confused. Tomorrow we open the doors to our first clients, and we are so busy finishing with all that final details. How exciting!
But when I went out yesterday morning, finally the winter cold arrived and with it, snow on Soller's mountain tops. My first thought was, "what a luxury to live in this land and see lavender bloom with snow capped mountains in the background." My second thought was "winter is here, time for pumpkin spice!!!" And like that my day began, in the chaos of our opening, decorations, bookings and two children with fever, my head reciting this weeks article.
I am a woman who does not follow recipes, I don't like them a bit! Actually I don't know how to follow them, and if a crazy day in my calendar says to follow one, they never work out! What I like is to improvise and use my creativity with ingredients I have at home and others I intuit, will be delicious. For something we get ideas! And I assure you that's how my best recipes emerge.
Coincidentally I had a pumpkin, cinnamon, ginger, almond milk, coconut milk, agave syrup and coffee at home, but luckily with my friend Claudia, I had everything. What an enchanting woman! Her store is adorable and I love how it smells. It smells of teas, fresh and healthy pastas… Mmmm how delicious!
Finally, when its cold, raining or snowing, we all become a bit more homey and cozy. We love to drink something warm and we need something delicious that fills us with energy. And who doesn't like the famous Pumpkin Spice Latte from Starbucks? Yes, they are very good. Even though I feel they were better when they first started.
Anyway, they are very expensive, if we drink one of those lattes, honestly we fill our body with toxins, artificial flavorings and kilos of sugar. Why invest in that? It's much more interesting to make our own Pumpkin spice latte, with natural and healthy ingredients for our body and wallets. Here come our version!
80 ml of Pumpkin puree
Pumpkin Pie Spice:
3 Tbsp. ground cinnamon
2 tbsp. ground ginger
4tsp. ground nutmeg
2 tsp. ground allspice
2 tsp. ground cloves
Pumpkin spice syrup:
1 cup of water
a bit of agave nectar or your desired sweetener
1/3 cup of pumpkin pure
1 tablespoon of pumpkin pie spice
½ teaspoon of vanilla extract.
Pumpkin spice latte:
1 shot or 3 tablespoons of espresso café.
1 shot or 3 tablespoons of Pumpkin spice syrup
¾ cup of milk
The first step is to make Pumpkin puree with a pumpkin. We can take advantage of the whole thing and make a soup. We put chopped up peices to boil and simply separate a few for the latte (without salt, oil or other spices) and boil those pieces in another pot. When its ready blend approximately 80 ml.
And from this magnificent ingredient that is the pumpkin you can use everything except the skin. Clean well the seeds and put them to dry. Later you can golden glaze them in the oven and use them for bread, muesli, salads… Tell me it's not marvelous!!!
Second step is to make Pumpkin pie spice, for that we need 5 ingredients: Cinnamon, ginger, nutmeg, allspice, cloves. They are all powder. Mix them well and put them in an air tight container to keep them dry and preserve their great smell.
Third we make Pumpkin spice syrup, what we get from the puree, the spices, a cup of water and some agave syrup. Each person has a unique way of sweetening their life, so feel free to add brown sugar or other natural sweeteners you like.
Put it all in a pan on medium heat until it boils stirring occasionally. Reduce the fire and leave it 3 minutes until its consistency becomes creamy. Add a bit of vanilla and take off the fire. You can use this immediately or put it in the refrigerator for a week.
Once the syrup is ready, we mix it with a bit of milk, I use almond milk, and a strong flavored cafe espresso. Mix it well.
To finish, and if you feel like indulging, we can make a unique whip cream beating rice milk and add it on top of the coffee. After add a few drops of agave nectar and sprinkle a bit of cinnamon.
The moment to fill your morning with pleasure and energy has arrived! This latte of pumpkin, almonds, coconut, agave nectar, coffee, ginger and other spices is almost like a complete breakfast!
In these cold days this is what we drink at Ecocirer and like that we will receive our first clients this sunday morning when they wake up.
