I have decided that this will be a very good year.

January is the first chapter of a new book. An amazing adventure and love story full of dreams, projects and healthy recipes.

The future depends on what we do today, having in our hands 365 chances to be happier. The happiest!! Many opportunities to make mistakes to learn from them, improve, move and grow.

So, why don’t we start eating healthier? Just give this year the chance to be a big year. The year that changes your life into a lifestyle.

From the moment you decide to eat healthy, you feel good, energetic and in a better mood.  You will also increase your dreams, mental capacity and your organization. You work with passion and you reach your goals. You get up early and give thanks to life. You feel motivated and you love it.

And so little by little, day by day, you give shape to your life. All aspects get better and complete.

Normally, when you start eating healthy you can quickly feel the improvements, but perhaps you will get the impression that nothing changes. The truth is, in the end of the year you will look back and everything will be different. For good!

Do not give up! Because great things take time, require effort and work.

Be friends with your kitchen and don’t be afraid to experiment. The point number one is fresh ingredients and homemade recipes. Start with simple things and say goodbye to white sugar.

Nuts & quinoa granola with coconut yogurt

Yogurt

  • 100gr coconut pulp
  • 2 tbsp coconut water
  • 1 tbsp grated coconut
  • 1 capsule probiotic

Granola

  • 1 cup fresh nuts
  • 1 cup quinoa flakes
  • 2 tbsp agave nectar
  • 1 tsp coconut butter

For the yogurt, mix all the products in a blender until soften silk. Pour it in a hermetic container, cover it with a dishcloth and let it rest in a complete dark place. 12 hours later, open the jar and your yogurt is ready to eat.

For the granola, preheat the oven at 160º. Crack the fresh nuts and place them in a bowl together with the quinoa flakes. Add the coconut butter and the syrup, stir carefully with a wooden spatula until you create big crispy flakes.

Cover an aluminum tray with baking paper, place the granola on top and let it bake for about 20 min, until golden toast.
