December brings the winter and frosty mornings. Sleeping time for flowers and animals has arrived. Starts our homely-life, with cozy nights and twinkling lights.

When the bells of new resolutions are ringing, we realize how quick time passes and so, here we are again, at the doors of a New Year.

This is the month for being more thankful, making wishes and raising a toast for you, for me, for us, for health.

The houses light their open fires, the village smells like sweet Clementine´s and the earth is damp, inviting to have a walk and a fresh meditation. The short and cold days, are asking for warm and consistent meals. Our body needs more fat, nothing bad about it, its natural. Lets just make it, as healthy as possible.

So, turn on the oven and let the winter ingredients take care of you.

December is about sharing fantasy, Christmas songs and blankets on the couch.

We like to spend time together. Please, take a seat and join the table!

Christmas Crown

Dough

  • 250gr spelt flour
  • 15gr growing powder
  • 150ml coconut milk
  • 30gr coconut sugar
  • 2 ggg substitute
  • 40gr vegan butter

Filling

  • 45gr vegan butter
  • 60gr coconut sugar
  • 40gr nuts walnuts
  • 60gr sunflower seeds
  • 60gr goji berries
  • 2 tbsp spice mix

Spice Mix

  • 3 tbsp cinnamon
  • 2 tbsp ginger
  • 4 tsp nutmeg
  • 2 tsp allspice
  • 2 tsp cloves

To make the dough you will need two bowls and a blender.

In one bowl mix 200gr of flour and the growing powder. In another bowl, prepare the egg substitute.

In the blender, mix the butter, milk, sugar and 50gr of flour.

Pour this mixture in the dry ingredients, 200gr of flour and growing powder, together with the egg. Mix well all the ingredients until they are integrated.

Then, knead the dough for a few minutes and let it rest in a bowl until it doubles its size (around one hour).

Meanwhile, we work with the filling. It is as easy as mixing all the ingredients with soft butter and two spoons of spice mixture.

Its time to roll the dough! The best is to make a rectangle of around 50×40 cm and spread the filling on top. Then, roll the dough until forming a cylinder and cut it in half. Start twisting the roll, creating a braid that we will join at both ends.

Put it in the oven for 20 min at 180º.

The  Christmas crown is ready to surprise your guests!!!
